Entrees - Chicken with Balderson White Cheddar Primavera Sauce

2 tbsp All-purpose flour 25 mL
2 tbsp Unsalted Butter 25 mL
3 cups 2% Milk 750 mL
3 cups Balderson Extra Old Cheddar (white), grated 750 mL
2 tbsp Oregano or marjoram, finely chopped 25 mL
1/4 cup Olive Oil 50 mL
8 boneless chicken breasts, with or without skin 8
1 1/2 lbs Asparagus 750 g
1 1/2 cups Fresh or frozen peas 375 mL


  • Serves 6 to 8
  • Melt butter in a small saucepan
  • Gradually add milk, stirring continuously to form a smooth sauce
  • Add cheese and herbs
  • Stir until cheese is melted
  • Season to taste with salt and pepper
  • Over medium high heat in large fry pan, cook chicken in olive oil for 10 to 12 minutes, turning once or twice until chicken is cooked
  • Meanwhile, cook asparagus and peas in lightly salted boiling water for 2 to 3 minutes or until asparagus is just cooked; drain

Serving Instructions

  • Spoon vegetables onto plates, top with chicken and spoon over sauce
