Appetizer - Belgian Endive filled with Balderson Heritage
Cheddar, Bacon and Red Pepper

2Belgian Endives, trimmed at the base and separated into leaves2
1/4 cupBeatrice Sour Cream50 mL
1 tspGrainy or Dijon mustard15 mL
3Slices of Bacon or same amount of Ham3
1/3 cupFresh or roasted red peppers *, diced75 mL
1 1/2 cupsBalderson Heritage 3 Year Cheddar, broken into marble-size nuggets375 mL
Drizzle of Honey


  • Prep Time: 20-30 minutes
  • Serves 4
  • Mix sour cream and mustard
  • Cook and dice bacon or ham
  • Drop 1/2 tsp (2 mL) of sour cream onto the lower third of each endive leaf
  • Place bacon, cheese and red pepper on top in a nice pattern
  • Arrange leaves on a plate in a sunburst pattern and drizzle with a thin stream of honey
    from a fork or squirt bottle
  • If desired, garnish with a sprinkling of fresh ground pepper, herb leaves or edible flowers
