Mushroom Brioche with Balderson Cheese

Entrees - Forest Mushrooms in Cheddar Cream over Brioche

4 cupsMushrooms *1 L
1 tbspSoftened salted Lactantia butter15 mL
2 tbspShallots or Onion, finely diced25 mL
1Clove Garlic, minced1
1/2 tspFresh Thyme leaves7 mL
1/4 cupWhite Wine60 mL
1 cup35% Cream250 mL
1/2 cupBalderson Royal Canadian 2 Year Old Cheddar, grated125 mL
4 slicesEgg Bread, toasted4


  • Prep Time: 30 minutes
  • Baking Time: 15 minutes
  • Serves 4

* preferably a mixture of button, oyster, shitake and Portobello, cleaned and cut into quarters or slices. The stems of shitakes are tough, so its best to remove them.

  • Melt butter in a medium sized pan over high heat until it foams
  • Add a pinch of salt and stir mushrooms 3 minutes until they start to soften
  • Add onion and thyme and stir 1 minute further, then add garlic
  • Pour in wine, cream and cheese, and reduce by half to a sauce-like consistency
  • Salt to taste
  • Spoon over toasted bread and decorate with a sprig of thyme. Be sure to get all the sauce out of the pan with a rubber spatula!
